I have recently visited Joan Coukos, a owner of Chocolat Moderno at her factory store in Chelsea, 27 West 20th Street, NYC. Joan is one of 2013 classmates of Les Dames d’Esscoffier. Joan is an accomplished and talented chocolate maker. Her chocolate won Gold prize in 2012 and 2013 at Fancy Food Show. Joan asked me to taste her Kimono Collection. Beautifully printed chocolate pieces have hidden Japanese flavors. Koshian (azuki bean paste), shichimi (seven spice powder), matcha (powdered green tea), kaki (persimmon),…..subtle but noticeable flavors melted with chocolate in my mouth. Well done! Joan will be coming up with Kimono 2 Collection soon. I cannot wait to taste her new creation when they are available.
