saucingH filletingPlease join me at Grand Army Plaza Greenmarket (Prospect Park West & Flatbush Avenue, Brooklyn) this coming Saturday, September 20th, from 11:00am to 2:00pm for additional seafood filleting and cooking demonstration (https://www.grownyc.org/greenmarket/brooklyn-grand-army-plaza) Stephanie Villani of Blue Moon Fish Co, from Mattituck, NY, will join me. Stephanie and her husband, Alex, sell the freshest, locally caught fish at Greenmarket in New York City. I am a great fun of their fish. You can purchase already filleted fish from their stand, but if you do it by yourself in your kitchen, it is even better.

I will show/tell you;

  • why you should fillet your fish
  • how to check the freshness of fish
  • how to scale fish
  • how to fillet fish
  • how to cook it in the most flavorful and healthy way

You will be tasting poached fish with 2 different sauces, which come from my cookbooks. The cookbooks are also on sale and I will autograph them.

From Greenmarket site:

“Saturday, September 20th, 11am to 2pm Seafood Cooking Demonstration with Hiroko Shimbo Hiroko Shimbo, author of The Sushi Experience and Hiroko’s American Kitchen, will demonstrate how Japanese culinary techniques can be applied to the seafood available in our region. She’ll be joined by Stephanie Villani of Blue Moon Fish Co, from Mattituck, NY. For over 25 years, Stephanie and her husband Alex have supplied Greenmarkets in Brooklyn and Manhattan with the local seafood caught from their boat, the Blue Moon, off Eastern Long Island.”

See you there! Bring questions with you! Hiroko
