George Faison at DeBragga No. 2

Here is a photo of George holding about an $800 block of meat! After trimming, the weight becomes 1/2 of its original, so the price of this piece will go up to $1600.  George frequently mentioned the term….

“naturally-raised”. So I asked what it means.  It is the method that uses no hormones, no antibiotics and no animal byproducts in the cattle feed.  George added cows raised with hormones are put in the feed lot at 10 months old.  Naturaly raised cattle are allowed to 18 months on pasture before going to the feedlot for 200 days to 500 days (for the wagyu).  This slower method prevents cattle from becoming sick and keeps them happier.  That happy cattle taste better is well established!

George asked one of his men, Jose, to show me how to cut dry-aged top sirloin.  Here is a picture of him breaking it down.
