BAP Certified Salmon from Uoriki Fresh

Michael McNicolas of Uoriki Fresh introduced me a salmon from Northern Harvest Sea Farms. Northern Harvest Sea Farms have recently named as a BAP certified “three-star” salmon operation in North America. BAP stands for The Best Aquaculture Practices program, and is “an international certification program based on achievable, science-based and continuously improved global performance standards for the entire aquaculture supply chain, which includes farms, hatcheries, processing plants and feed mills that assure healthful foods produced through environmentally and socially responsible means.”

Michael, Vice President Operations, is generously donating this very new and special fish for my Book Launch Party on December 6th, 2012. I am planning to marinate it in White Sumiso Sauce (one of the sauces and stocks in the Hiroko’s American Kitchen), grill/cook it and serve it to the attendees. I tweeted the photo of the salmon with Peter Perdikis of Uoriki Fresh yesterday.
